Who says you can’t start the day with pudding! Chia seeds are packed with protein which helps regenerate healthy hair, skin and nails. They also support your digestive system with soluble and insoluble fibre and promotes weight management with high levels of vitamin B. I don’t think we need any more convincing! Let’s get started…
Cacao Coconut Chia Pudding – DF, GF, VG
3/4 cup chia seeds (black, white or mixed – they don’t have a difference in taste or nutrient value)
2 tablespoons raw cacao powder
4 cups coconut milk
1 vanilla bean – split and scraped
2 tablespoons of pure maple syrup
In a large bowl combine all ingredients – use a whisk to stir! Make sure the chia doesn’t clump up.
Cover and let set in fridge for an hour or until it is nice and thick.
While your chia is setting melt some raw chocolate over a double boiler and drizzle the bottom of your chia containers (this will create a delicious rich chocolate surprise when you get to the bottom of your breakfast).
Once your chia is set stir it one more time and portion into your chia containers, top with your favourite granola and your breakfast is ready to go!
