MB WEEKLY RECIPE // VEGAN & REFINED SUGAR FREE ANZAC COOKIES

It's Anzac Day in Australia so it's time to start eating (and baking) our favourite cookie combo of the year. These Miss Bliss style Anzac cookies are made with healthy alternatives and they are the perfect combination of crunchy and chewy, making them delicious and EXTREMELY addictive. What you need:

For the cookies

1 cup oats

1 cup spelt flour

1 cup dessicated coconut

3/4 cup coconut sugar

3/4 cup coconut oil

3 tablespoons pure maple syrup

1 teaspoon bi carb soda

1 teaspoon vanilla

30ml water

For the chocolate filling

300g Roasted hazelnuts

1/2 teaspoon salt

2/3 cups raw dark chocolate

1 teaspoon vanilla

1/4 cup coconut milk

What to do:

Combine oats, spelt flour, coconut - mix well

In a saucpan heat coconut sugar, coconut oil, mapple, vanilla and water - once combined add bi carb (it should fizz up)

Mix together both dry and wet mix until a dough forms

Roll dough into balls and place on lined tray - flatten with a fork or hands

Place in oven at 170 degrees for 15-20minutes or until golden brown

Blend roasted hazelnuts in a high power blender, then add the rest of the ingredients to make the chocolate filling

Once the cookies have cooled use the chocolate filling to squish between two cookies for a decadent treat!
